This journey started in July of 2019 when I helped my mom get her blood sugar under control. We first tried using the American Diabetic Association recommendations of low fat, plenty of fruits, vegetables, and whole grains, and some lean meats. Her numbers remained high and I started to pray for guidance. We came across the book, 60 Ways to Lower Your Blood Sugar by Dennis Pollack. The main theme was to test your blood sugar 1.5-2 hours after eating and remove any food that took the level over 140.
Within a week Mom's numbers started coming down. In 6 months her A1C went from 7.5 down to 4.9. She started dialing down her twice a day insulin shots and was eventually able to stop taking them altogether. She is still maintaining this way of eating!
Four months into helping my mom, I noticed that I was starting to feel better. I was eating some of the same meals and I was surprised that I had an increase in energy, I felt like I could do things after eating instead of feeling weak and tired. I did some research into the science behind a low carb diet and was surprised that many people would list their health benefits first, then their weight loss. I decided to take the plunge and go completely low carb. Within 4 days I knew this was the diet I wanted to be on the rest of my life. I stopped feeling hungry all the time, I had increased energy, the sugar cravings gradually went away, I stopped having to get up 3 times a night to use the bathroom, my acid reflux diminished, then disappeared, and the list goes on and on. And oh yes, I lost about 45 pounds and my mom lost 40 pounds (and she's still losing).
